INGREDIENTS:
1 cup of pumpkin puree
½ cup greek yogurt
2 eggs
1 teaspoon of Pumpkin Spice seasoning. OR use 1 drop each of Young Living Nutmeg, Cinnamon Bark & Ginger essential oils
1 ½ cups of Young Living Einkorn Pancake mix or Young Living Einkorn flour.
½ teaspoon salt
½ cup of Sugar or Agave Necter
1 tsp baking soda
1 cup of chocolate chips
INSTRUCTIONS:
Mix all wet ingredients, including spices together.
Mix together dry ingredients in separate bowl.
Slowly add dry ingredients to bowl of wet ingredients while mixing.
Fold in chocolate chips.
Spoon into greased bundt pan.
Bake in 350 degree oven for about 50 minutes, until toothpick comes out clean.
Cool briefly on plate or rack.
HOMEMADE WHIPPED CREAM
2 cups of Heavy Cream
1 teaspoon of vanilla
3 tablespoon of powdered sugar
¼ teaspoon Pumpkin Pie Spice
In stand mixer or using electric hand mixer, mix on high & slowly add in vanilla, pumpkin pie spice seasoning & sugar.
